Why do MF recruit this way?

I am just an intern so I might be missing something big and key but I am extremly confused about on-cycle recruiting. Basically, why would a MF rush to hire people so bad that people can't even interview at multiple places?

Why not give a long modelling test in which you actually understand how good are people at investing ecc. and spend several weeks before giving out offers. I understand stealing talent but this seems counterproductive to be honest
