My understanding is this is explicitly forbidden when you leave the bank through various confidentiality clauses. Obviously knowing everybody who Is in the process and what they are bidding would be tremendously unfair in favor of the PE firm

I have definitely seen an investment banking analyst sell a company to a private equity firm, then interview and eventually join that PE firm and cover the portfolio company.
If you’re talking about an actual live deal that is still actively receiving bids ... yikes, that’s a tough one. Can’t really help you there.
