What is the typical timeline for each? Is there any clear way to know you have been rejected?
What does it mean if they do not stick to their timeline to a T, but remain responsive? Neutral?

My experience as both the candidate being hired as well as the hiring manager is that once you have narrowed it down to your preferred candidates (the best) companies will act fast to lock you down and the final steps (signing the offer, figuring out the details of you starting, etc) should fly by.
For example, for my current position after my final interview I received my offer, signed and got my background check done all within 48 hours.
