Why would you not start off on the buy side if that is your end goal? Yes, working on a D/E team at one of the big shops will be helpful and you will learn a ton, but if your end goal is to end up on the “buy side” you should aim to start your career there out of college. Remember that “the buy side” can be everything from Blackstone to a small deal shop with a 4 person team.
