Hi, I’m a sophomore and I got the offer for 2024 Summer Analyst role but they haven’t given me any paperwork yet so wondering if it is okay to put on my resume?

What do you mean no paperwork?
Do you have an offer letter that's signed, or do you just have a verbal offer?
If it's signed, I would put it on. If not, I would reach back out to HR ASAP.
It was an email from the guy who interviewed me. He said we are excited to offer you a position in our intern program and look forward to hearing my decision soon. I accepted and he said great and that he will be in touch with more details soon.
Then I think it's fine. Would send a bump or something if it's getting closer to Spring with no formal details given.
