Courses in Progress?

As a humanities-type major, I'm worried my lack of quant background needs to be mitigated as much as possible. If I go to a super liberal arts school (think HYP) but am taking courses during this fall which are relevant to my hopeful job next year, is it fair to put them in a "Courses in Progress" bullet or is this too ridiculous? Think Macro, Accounting, and Financial Theory.
