Recent College grad, applying for a new job please critique!

Hello everyone, thanks for any constructive criticism in advance.

I currently hold a customer service rep position at a life insurance company and I am looking to get an entry level IT position and need help with a few specific things:
1. I am pretty terrible at describing what I did at my jobs and how to best portray them into wording on my resume. I would appreciate advice on how to better inform potential employers of what exactly I did at previous jobs and suggestions would help here

Current job description:
Resolves service needs, questions and complaints by telephone or written correspondence through gathering, researching and analyzing policy information. Provides personable, professional and courteous service within department time standards.
• Identifies cross-selling opportunities.
• Objectively documents all pertinent facts and information for future reference.
• Updates demographic or policy information when requested by policyholder.
• Directs follow-up work to other departments for completion.
• Remains current on new insurance products and Company procedures.
• Contacts clients to conduct conservation efforts on overdue policies.
• Retains current customers by offering all payment options
• Diffuses escalated clients to resolve concerns.
• Completes letters/forms to send to client

2. I am applying for a pretty entry level technical support job at a local college that assists students/teachers with technical issues on the website, blackboard things like that.
3. I want to gear my resume and cover letter to bring out what I am capable of and how I am a great candidate for the position.
I have very little IT experience, but a ton of customer service experience and self taught experience on various programs, applications and operating systems, as well as how to build computers, setup networks and servers on a small scale (1-10 systems) but no employment experience to show this...

Any help is greatly appreciated and I look forward to your help!

About my resume and reformatting to bullet points, that will probably make my resume longer than one page. Isn't that a deal breaker? (because I don't have much experience or skills that would necessitate 2 pages or a page and a half)
