Deferred MBA Admission Chances

Senior at a non-target, 3.9 GPA, strong extracurriculars, and year-round IB internship experience. My internship experience is at a tiny shop, but I have taken a ton of responsibility. 

I plan on applying to all the top deferred MBA programs: HBS, GSB, Wharton, etc. What should my expectations be if I can get a solid GMAT 720+ like I have on practice tests? I am a first-generation student and believe I have a fairly interesting story. 

Are certain schools out of the question due to not interning at a big shop? If any previous deferred admit could share their story and background briefly, I would appreciate the context. I would be more than happy with CBS and seems they take a pretty big pool.
