How does being a part time student look?

Have a easy major(Business Management), and got through a lot of classes in a year as well as the summer. Wanna be a part time student to grind work in internships(maybe working 6-8 hours a day) and all that as an incoming sophomore since I don't wanna graduate 1.5 years early and make recruiting harder but I don't want to make my life harder by adding a minor like accounting. Do I just bloat my GPA with async filler classes or go through with being a part time student(1-2 classes per quarter), I dunno how either looks to recruiters. Or am I braindead and there's something else I can do. Already know technicals needed in the job and I have job experience. And yes, I'm living my life, I see friends, gf, have a hobby in fighting. I'm not depressed.
