i once used regressoins for an corporate organization course, it was really really good, i analysed rotation with culture, education, age and stuff like that, and at the end of the day showed that the rotation in the organization (it was a global one with over 20k members) depended on culture (and i did a culture index so that i could run the regression, the index dependedon whether they had a western, eastern or african culture)

In doing many a regression analyses, I have always been limited by the data that I can get my hands on. Take a look at different data sets, whether through your school's access or through government sites like bls.gov, and you should start to get some ideas.
