Why is that when I contact people for networking chats using their work email, I'm told to email them on their personal/school email, or even personal cell? It's happened everytime.

Should I be apprehensive about doing this? Why would they be so concerned that they would tell me to do this?

Because a lot of people want to keep their communication which doesn't affect their actual work (ie deals, client comms, .) outside of their inbox.

It also allows them to talk more freely. Don't forget that most (if not all) corporate comms is subject to analysis through the company. They specifically say you can't use the corporate email for personal purposes. You could argue that a potential hire IS somehow business use, but still.
