For example, something like Wells Fargo vs the BBs, does the bank or desk/individual performance matter the most for exits in S&T for things like HFs in the various products

i dont think so, im working at a "shittier" mm bank for S&T and one of the desks I rotated on the last 3 people quit for citadel, citadel, and millenium. meanwhile all the alum I know at GS etc. all had shit exits. all that matters is what you produce.

Desk over bank. The person matters not the bank, but bank prestige is just a signal when you apply to new jobs similar to college prestige. I’d take into consideration bank prestige if you aren’t 100% set on this field as working at a big name is broadly well regarded, so it might be easier to pivot to different fields
Top bank but only if good desk where and/or 1) you think you can learn to trade and understand the flow of that mkt 2) environment is such that you'll develop.
Top banks only have 'prestige' because they increase the probability of the above, imo.
