First of all, is UVa considered a target for consulting firms like BCG, Accenture or Deloitte?
Also, will a GPA of 3.75 in Aerospace Engineering be sufficient for a shot at an internship? Will it improve my chances or be almost irrelevant past the chance at an interview?

you have a fighting change at any of those firms, but if you're truly interested in consulting, cast a much wider net.
Your GPA in engineering will almost definitely get you quite a few interviews at these firms as long as your cover letter really demonstrates why you want to consulting instead of engineering. How well you prep for case interviews + "why consulting?" explanation will really be the deciding factor for you but you're in a great position.
