I guess what I'm asking instead is how to maintain the relationship?

Yes, absolutely update them on where you accepted an internship. You never know when a contact will be helpful to have, and it’s a lot easier if you’ve been in touch with them to reach back out when that time comes.

This is something I struggle with a lot and I think everyone does. I think generally it’s appropriate to shoot a note on any career move / promotion or other event (going to business school for example), but it’s a tough one because these might only happen once in 2-3 years. Rule of thumb I’ve heard is to try to be in touch at least once a year, which requires the occasional “wanted to check in and see how everything was going” email or something like that. Be great to get others advice on this as well.

I send an email every couple months to update then on my current internship, who else I’ve connected with, etc.– and really anything that pertains to my initial conversation with them. I also try to hop back on the phone every few months to catch up/ask any other questions. I’m still recruiting/networking so can only speak to this so much, but feel like I’ve been successful in getting to know some bankers.
