How much would an undergrad internship, and hopefully a few years of experience, at Goldman Sachs help my chances of getting into Harvard/Columbia/NYU (JD, MBA, or both)? Is two years the standard amount of time to spend working after college before going to grad school?

would help more for an MBA than for a JD. Even then, it's pretty typical of a lot of candidates.
Typically, a bunch of candidates do a 2year analyst program before b-school... but if you go to the b-school website, it will show you stats on how much FT experience those who were accepted have (I think 6 yrs is the average at most)
It really depends on the division, b/c if you aren't in the front office, it really isn't hard at all to get into Goldman. I'm curious about this question myself, but I would think that if your doing banking at Goldman, it'll say a lot about you on your resume regardless of your boards and GPA.
