STUMPED: Best use of 2-3 weeks off work?

Looking for some general thoughts here:

Long story short, I'll be taking 2 to 3 weeks off work in the coming months due to accumulated time off, but I haven't really planned anything.

The question is, how can I best use this time to my advantage and not just piss it away? If I wanted to attend business school (MBA) in the future, is there something specific I could do during this time to strengthen my CV? Perhaps work at a foreign charity or take an unusual trip worthy of a conversation? Aside from this, is there anything, other than just travelling, that would seem to you WSO-nians to be a good use of the time to boost my CV in general?

I'm open to any/all wacky but viable answers. Currently based in Europe/UK.
