Torrey Pines and the Emirates Golf Club are the two I know of that I would love to try one day.
I played the semi new TP North last summer and great lay out. I never played the old North layout. The south is money.... you def should make that happen and its super cheap
Any Wii Sports course
Domestic: Southern Hills (grew up in Oklahoma, still haven't played it), The Country Club, Bandon Dunes, Shinnecock, Pebble, Torrey Pines, Oakmont, Erin Hill, Medinah, Congressional
International: Le Golf, Carnoustie
and obviously Augusta and RAGC
Courses I've played and would recommend to someone putting together a list like this (only because the majority of these will be the "lesser known" type courses): Karsten Creek Oak Tree Kapalua Palmetto Dunes Pinehurst (not a big jump here) Harbour Town (or here) Castle Pines Broadmoor Newport Nationa

Thats a solid list. I played Oakmont in July and it was amazing. One of my fave days on a golf course.
Torrey Pines is my fav & I could play there everyday and be happy
Probably a trashier (pun inbound) response than most, but for sure the 16th hole at the Waste Management Open at TPC Scottsdale, have the whole coliseum filled just to watch me spray an innocent bystander.
Honestly I'd really like to play any SW US course that is surrounded by just straight desert, the whole oasis in the sands just has some type of allure to me. I only ever get to play in the mid-Atlantic/NE region so to be honest anything on the left coast would be nice.
I did an Arizona golf trip this year and it was great. Bunch of great courses in the area.
