Oddly enough, Oliver Wyman has one of the leading practices if you want to do actual aviation work (as opposed to other kinds of consulting work for aviation companies). The guy who runs that practice is a part-time airline pilot.
FTI is growing their aviation practice. Straddled between RX and M&A advisory
There is a boutique consulting firm called Arnovia that is a very small team, but very good in the A&D space. They focus on buy-side due diligences for A&D targets. I dont know if this is exactly what you're looking for but these guys are very good
