Oh boy, as a fragrance enthusiast here is what I can suggest:

Aqua di Parma(lighter side not very long lasting but you don't wanna kill people in the office) - try the Colonia line

Tom Ford Beau de Jour - personal favourite of mine but go easy with the sprays

Creed Green Irish Tweed and Creed Bois Du Portugal - both are very nice, leaning pretty masculine and mature

Le Labo Santal 33 and Bergamote 22 - cant say much here except that I had them recommended a lot. I've tried them they smell good but are not my particular type of scent

If you want something high end check the private blend of Tom Ford and Xerjoff. Can mention TF Oud Wood and Xerjoff Torino 21/22.

Personal advice is: Fragrances are like clothes , everyone has their own style so just go and try as many as possible. Also for more detailed note breakdown check out Fragrantica.com

Thats a really broad question and I would suggest you to go over to reddit (i.e., fragrances) where there are tons of discussions about perfumes. The way you described it it doesn't also seem as you have any grasp of perfume notes or understanding of your own preferences. 

I would do the following: 

- go to a Perfume store and just try different samples, close your eyes, check what you smell/how you feel. Go to sites such as Fragrantica/Perfumo and see what notes the perfume includes and how are people discussing the fragrance. You should have least a baseline understanding of scent types (e.g., woody/dark/smoky, aquatic, fresh/summery, flowery, sweet/amber) and there are also tons of YT videos who break up these categories much more sophisticated than I just did and thats how you develop it

- if interested dive a bit deeper into fragrance brands/landscape. Generally you distinguish between "designer" and "niche". Designer are the typically house-hold brands you find in any Perfume store (e.g., Dior, Versace, Hermes) niche perfumes are typically not available in "common" stores and more expensive and often also often with more distinctive scent combinations (not necessarily better). Some brands would be MFK , Creed (both very widely known and can found on tons of people), Xerjoff, Diptyque, Zoologist (really nichy)

From there I would just build up a small collection of 3-5 different fragrances for different occasions and if you enjoy the process of testing and finding new fragrances it can venture into an awesome hobby.

 

terre d'hermes eau givree. Amazing scent and best clean one as someone that has over 50 of them.

prada lhomme is great aswell.

lv imagination or ombre nomade is amazing.

pdm layton.

cartier de pasha is underrated imo.

the list goes on but overall just try stuff somewhere.

Lot of great suggestions already. I used to just have Eros myself and becoming sick of it after wearing it going out was what pushed me off the deep end into fragrances.
 

Some more clean office scents to consider:

  • Creed Aventus is great. I also enjoy wearing Millésime Impérial. Really versatile, clean refined fragrance. I would argue easier to wear in summer than Aventus.
  • Royal Water and Erolfa are two other nice and clean scents from Creed. A similar one, Floris Cefiro, reminds me of Erolfa but with more citrus in the top note. I also love Virgin Island Water and Himalaya depending on the weather and vibe.
  • MM replica line, like Lazy Sunday Morning, Bubble Bath, and Sailing Day are great. Get the sample set which has quite a good variety of safe office picks plus some nice unique outdoorsy scents like Autumn Vibes / When the Rain Stops.
  • Have also picked up a few Pour Homme EDTs from Kenzo, Issey Miyake, and Dolce & Gabbana over the years that are all very wearable and inoffensive. These and similar fragrances are easily found in duty free or online at serious discounts. I think these are a better way to go than picking up Sauvage or something competing with it as those would IMO be too clubby for a daytime / office scent. A light and basic EDT with wood base notes and a bit of fruit and flowers in the top and middle is a good formula. 
 

Assuming price isn’t an issue Creed is a strong one to consider. Realistically since you’re just getting into it I would go with more basic ones mentioned here:

1. Dior Homme Intense is a masterpiece and very popular
2. Acqua Di Parma(lots in the line test to see which you like)
3. Prada L’homme
4. Club de Nuit Intense(if you want something similar to creed but a lot cheaper)
5. Pasha de Cartier is very safe
6. Armani Code
7. YSL Y EDP
8. Bleu De Chanel EDP/ Parfum
9. YSL La Nuit D L’homme
10. Chanel Allure Homme Sport

Most people would say these are extremely basic which they are, but as someone just getting into colognes, starting with designers is probably best. Still try and figure out what you love to wear because at the end of the day as long as it’s not something out of the occasion at the office.

For office environments, opt for clean, versatile fragrances with moderate projection and good longevity—nothing too bold or sweet. Fresh woody or citrus-amber profiles work best as they stay professional and inoffensive.

From experience, Elyon Dubai’s Infinity is an excellent choice for daytime wear: a refined blend of bergamot, lavender, sandalwood, and amber that opens fresh, settles warm, and lasts all day without overwhelming colleagues. Aria offers a slightly more elegant, powdery iris-sandalwood vibe if you prefer something softer and understated.

A couple of sprays on the neck and wrists in the morning will keep you noticeably fresh through meetings and beyond. Great picks for anyone easing into everyday colognes!

 

I went through this with my wife last year and spent hours in the mall searching for an upgrade to Acqua di Gio. We landed on Hugo Boss Infinite after sampling around 50 colognes. It's a medium-light and clean scent in the same realm as Acqua di Gio. It's a perfect daily office cologne and will offend no one if you keep your application of it reasonable.
