My understanding is as long as your job/office is based in NY on paper, you still have to pay NY state income tax, even if you work from home in other states, correct?

A few months ago New York State issued guidance on what would be considered NY taxable income vs not (spoiler: most people will be considered as NY tax, but you should see for yourself).

Most likely yes, although this is a year where it may make sense to consult a tax professional and get advice. As I said there have been many arguments over this and I imagine there are different interpretations of these rules.
