Best shirts for not wearing a tie
I have some pretty high end dress shirts, but a lot of them look kind of weird (especially Eton imo) with the top button unbuttoned since we don't usually wear ties. What are some shirts that you guys like that look good without a tie?

Honestly Oxford cloth button down collar shirts. Dress shirts without ties are a terrible look and all too common. Go to Brooks or have some made at Kamakura.
I agree, but are button downs too casual? Also, where do you get yours?
If you’re not wearing a tie, no they are not too casual. I personally get bespoke ones from a tailor.
why does eton look weird?
The top button is too high so when you unbutton it it looks kind of weird. If you unbutton one more it shows way too much skin
Own ~20 Eton shirts, their sizing can be a bit annoying. 4 cuts with small differences. Example, 38/15 contemporary and 39/15.5 slim both "technically" fit me given same chest dimensions. To your point above, the slight difference in fit on shoulders is really only visible when unbuttoned.

Charles Tyrwhitt has always worked well for me. Usually stock up on a bunch of their non-iron shirts when their 3 for 99 sale is happening.

Charles Tyrwhitt has consistently been the best bang for buck on dress shirts. Other items not so much.
Rhône commuter line - game changer
1) Charles T - $50, 3 for $100 - good value, low price. Store on 45-46 and Park, if you want to buy quick grabbing lunch - or order online. Good patterns, good colors, looks professional. Honestly looks more extensive than it is.
2) Hugo Boss - $100-120ish - subtle flashy boss look. Wear them to the club w/ jeans and look fresh. Great for slim fit. Even have a Super Slim Fit I think. Good suits too $850-900ish. Sell them at Nordstrom, Bloomys, and Hugo Boss store in Meatpacking it you want suits or fly ish that ain’t in big box stores. Actually got a couple suits that were TOO slim, never ended up fitting me, then gained from 32 to 34 waist and the rest is history.
3) Thomas Pink - $200 - high end dress shirts, my go to interview shirt, or shirt where I want to get noticed that I look sharp. Ppl notice the threading and high end look of a Thomas Pink shirt. For alternative designs from blue, white, & pink - I’ve ventured into Pink for a button down to wear to go out in. Store is right by Jefferies office - can’t think of the streets but those guys working there will treat you like a King and give you Fiji 🇫🇯 water if you come in.
All 3 are good, just depends how much $$ you wanna blow on stroking the ego. My pick - go with 5-10 Charles T’s, 2 Hugo Boss’s, and 2 Thomas Pinks each in White & Blue
Love Boss polos/casual shirts but... do not buy one of their suits unless 50%+ off MSRP. It is a cheap fused suit with a branding markup. You can easily get full canvas suits in their price range (~$900) at the same stores listed with some sale patience.

Think you should look at getting your shirts made at a made-to-measure (MTM) shop (Proper Cloth, SuitSupply, Indochino, Ratio). At that price point, you can customize details that will complement your body and solve for the issue of getting a few shirts that are specifically for not wearing a tie and one or two that are meant to be worn with a tie. Usually, this issue arises from the design of the collar. If you are in NYC, I would make an appointment at Proper Cloth and bring the shirt that you are talking about in your OP. They will work with you to pick out sizes, designs, and materials that look "better", for lack of a better word.
