Better to Interview Sooner or Later?

Title says it all. Have a superday coming up next week and was given a lot of autonomy over the scheduling. Was planning on interviewing sooner rather than later, and I wanted to hear everyone's thoughts on this. Do offers go out once everyone has been interviewed? Are offers given out on a rolling basis?
