Does anyone know of any places in downtown Chicago that will do month-to-month rentals? Can't commit to the full year yet and might have to move on short notice.

It's not a pure month-to-month option, but places like The Blue Ground apartments would be a decent option. Furnished, utilities already set, & typically a decent rate on vacant units close to move-in date on ~1.5-2 month terms. If your place is priced at discount again close to your move out ask to roll into another term or just keep unit hopping to ones that are discounted.
I used them for a unit in Streeterville for ~ 2 month beginning of 2020.

Yeah, Zues Living is another, although doesn't have Chicago units. I've found Blueground tend to have the best rates and selection, which is why I went with them, although less flexible with dates than some of the others. Only have experience with Blueground, but it was a good overall. Fairly seamless set-up, background, and just had to check-in with doorperson on the move-in date. The person on duty didn't really know what Blueground was, so it took them 20ish minutes to check with building leasing/sales, but they found the fobs.
Hope these type of companies survive long-term as I like the model. Even if you're somewhere long-term the competition may eventually start to loosen up long-term lock-ups.
