On the real, no, your sophomore internship will not pigeon-hole you and there's a lot of cool things to learn in FIG. It's not uncommon for people transfer to other industry/product groups from summer analyst to full-time positions, even when switching firms.

also, if I end up doing banking over the summer as a sophomore, and I attend a target school, will that significantly help my chances of getting a good job junior year? My gpa is decent, not great
assuming you network a bit and do well in the interviews, there will definitely be many opportunities available for you
Depends. If you're doing banking at a no-name boutique, it'd help you a little bit, but not much. Boutique banking internships are becoming more common, and sophomore internships aren't weighed that heavily in general, unless you're working at some major name. If you're doing banking at a middle-market firm, well-known boutique, or bulge bracket, then it'd help a lot more.
