I go to a non-target university and have not secured any internships. If I learn to financial model in excel (eg: DCF, M&A, IPO, LBO ETC..) will this increase my chances of getting a graduate Intership

It all depends on your GPA, extracurriculars and signs of ambition. Learning how to do models is useful but defo not something they look for when they give your resume a first glance.
My tips would be:
-try to keep your grades as high as possible
-try to find extracurriculars (board years, committee's, university positions (like 'head of student counsil' or something)).
-write a killer of a cover letter
-network. Go to career events across the country and just talk to people
