I am in a very fortunate position to be deciding between the two. EVR summer in London and GS OC in a regional office in Europe (think France, Italy, Germany). Just wanted to ask which one is better. Thank you!

IMO you should prioritise (1) whichever has a better return offer rate and (2) your own personal priorities and where you want to live. I don't know what OC conversion rates are in Europe, but EVR SA conversion rate wasn't that bad this past summer AFAIK.
EVR return this year was 55-60%.
