If I want to switch minors?
Currently, I have accepted an offer from a BB and am planning classes for next semester. I am thinking about getting rid of my math minor in order to take some classes that are easier and interest me more. However, I listed my math minor on my resume and I am worried that if I graduate without it, it might come back to bite me. What do you guys think?

I don't think that it would matter. It's a minor.
Nobody will care or even notice. Go ahead and take the classes you want.
What about if you have a double major and you want to change a major to a minor?
Once you have an offer, the only thing that a bank cares about is that you graduate on time. Provided you have that piece of paper in your hand you could get a major in bum-fuck studies and would not give two shits.
