Intern Activities to Leave Off?

I'm wrapping up my freshman year internship and quite frankly have gotten loads of increadibly valuable experience. I've worked on buyer's lists, CIMs, light financial modeling, creating meeting notes, and market sizing. I've heard that some associates / analysts during interviews won't believe an intern working on a financial model for example, so is there a list of activities that I can list on my resume without being heavily scrutinized?

It sucks because I have indeed done some pretty cool stuff but I feel like I have to tone it down a bit so I don't look like I'm bluffing
