It isn't necessary to tell them their role was not fitting with your career path. Just be polite and move on, more polite thing would be to call.

You're right, you should specify that you're reneging for an IB role. Might even be helpful to include which tier of bank, just for clarity for the recruiter. Also, change "great difficulty" to "heavy heart" -- this may soften the blow.
Actually, he might as well say the bank, office, and sector he is working in. Hell just give them the exact location(within 3ft) that his in.
