Some of the applications I've been filling out ask for my ACT score... I scored a 34 but don't know if I should include it. Do they care if I don't submit it? If anyone have any input on whether or not it would help or hurt me in the application process I'd be grateful for any feedback.

Wouldn't worry about it too much. Your GPA, internship experience, and extracurricular involvement will be more important. Also a 34 is still very good, I think they would only ding someone who has below a 30 or 31.
