I know of several people who have done valuation at Stout before pivoting to IB / CD. I'd imagine it allows you to develop decent modeling / valuation skills and a solid foundation in finance if that's what you want to pursue long-term.

The job is basically 70% modeling and 30% writing reports about the model which are the deliverables to the clients. Exit ops are IB, corp dev, ER, consulting, and bschool based on what I've personally seen and what I've read on this site. Moving internally to different groups/offices is possible and Stout promotes that. Hours are usually =60 but can blow up when something like a fairness opinion comes in.
