I am currently a student at __________ with a current major of Economics, over last summer I interned at a large family office in NYC.
If you have any availability next week, I would greatly appreciate the chance to speak with you and learn more about your firm and the possibility of completing a summer internship there.

I can fill in the first box for you. As a sophomore, you would be a "student at" and not a "recent graduate"
What does "as internships in" mean?
I wouldn't be super specific with your timeline, you want to be somewhat flexible around what they can offer *you*, not the other way around.
I would move the last line up to the second sentence. You want to seem like you're more interested in them and what they do then them just blindly giving you an internship.
