UMN econ non-standard education... Sophomore internships?

Quick backstory:
I studied aircraft maintenance right out of high school, then wound up doing portfolio management for a regional real estate firm for a few years.
I'm "transferring" back into school, attending University of Minnesota-Twin Cities for Econ (different topic, but I want the econ major for personal reasons). I'm not sure if I will be in the economics major formally, or considered a continuing education student by the end of the semester (fall 2019 I will be formally in the program and it may happen sooner).
I should have ~45 credits at the end of Spring '19 semester. I'm expecting graduation winter 2021 so will be able to snag 3 internships. I'm hoping to land a Fed internship and/or IB for the latter two but I'm looking at something for summer of 2019 that will help with those goals. I'm expecting to rely heavily on networking.
So far I've been shooting for real estate capital market internships to hopefully leverage my work experience into something I can build from, but also looked at some commercial real estate lending stuff.
Any recommendations for a reasonable first internship to start down the right path (or any other input)? Anyone in MN who wants to grab a beer sometime in early November?
