How does the SA hiring process generally work at MM boutiques. Do they have month, say March, where most of them stop and extend interviews? Or do most hire as applicants inquire about spots?

Depends on the shop. Usually the structure is the same (1st round, superday, etc). Some have OCR and some don't. There are tons of MM shops, so your question is extremely broad. If they don't come to campus at your school, reach out and apply through their website/network your way in. In my experiences, MM shops are no later than BB.
