Would writing "financial report analysis" or "financial statement analysis" or anything similar be looked favorably upon under skills for a resume for IB internships, or would it be met with a laugh since it could be something you are expected to know or could be easily trained for?

I have never seen a skills section in a resume tailored for investment banking. It would be more meaningful if you could show your skills through the responsibilities and bullets under your experience.
