Acceptable to list just 1 out of 2 minors?

I'm majoring in econ and my school requires 2 minors. The first minor that I'm doing is a legit quant minor (statistics). The other one I'll probably end up in some underwater basket-weaving type nonsense just to get course category requirements out of the way. On my resume, can I list just the statistic minor after my degree, or do I have to list the other one as well? Thanks.

Downplaying your resume is always accepted. You could even just put your major down and no minor, because it's true. You got a degree with that major from that school. What you couldn't, well shouldn't do is put a second minor if you only have 1.
