Applied to 18 banks over the last 5 days, I got three rejections and 2 coffee chats. Should I be worried though? When should I automatically assume I got rejected from the banks that didn't respond yet? 2 weeks?

It might take several weeks or more to hear back. Keep applying every day to more and more places.
