Coming into College as a Sophomore

I came into college (non-target) with 32 hours, I've had multiple informational interviews and been told I have a great resume if I was a freshman but I'm lacking as a sophomore. The level of jobs I've been recommended to look at require previous internship experience (all I have is a brief shadowing with treasury at International Paper). I'm wondering if there is a way I can sell myself to get into positions that require experience or if I'm just going to have to start smaller. (I'm networking but nothing has come from it yet) I also plan to transfer to UT Austin next year so I won't be at a non-target for junior and senior year.
