This is an opinion, and I don't know for sure, but I think you can say:

Bachelor of Science in Finance, Accounting, & Entrepreneurship; Minor in Economics, Poly Sci, & French

Then after you get your junior SA, just drop everything except for Finance. Probably a bit unethical, but I don't think anyone would care or even notice.

 

I'm still a student, so take my opinion for what it's worth, but I cannot imagine they would care. Realistically, after you have interned all they care about is whether you did a good enough job to be extended a return offer. And if you don't get a return offer and go into FT recruiting, all that another firm will want to know is why you didn't get a return offer. They may ask why you didn't finish the other degree, but you could easily come up with an answer for that (wanted to focus on other degree, graduate early...even lie and say extenuating circumstances due to family issues forced you take on a lighter classload). I am going to go out on a limb and say it won't decide whether they hire you or not.
