Doesnt matter. Assuming there's a minority pile and a not minority pile (not saying there is), you'd still go in the not minority pile regardless.
I would imagine if you put "prefer not to answer" then they just treat you as nondiversity, or more specifically white (unless you have an ethnic name). It may help if you're Asian with a white name but otherwise it probably changes nothing since you don't get put in the diversity pile unless you explicitly report as being black/hispanic.
