How much networking is enough during the virtual internship?

Currently doing an internship. In the past I would try to speak with at least 1-2 people per day while in the office, however with the virtual internship it's quite hard to reach out to people as most people as there have been a lot of time dedicated to projects and training and not much free time lately. It was pretty easy to get to network with people as you could just go up to them and set aside time to meet. Also, I find it hard to get in contact with people, especially older employees, as I assume they would rather be with their family around 5-7PM and not tend to work related stuff. Also HR and everyone else at the firm suggests trying to get to know as many people as possible but I'm not sure if 1 person every day or every other day is acceptable right now. Thoughts?
