Please help me plan out my future in my college career in terms of internships?

I'm a rising sophomore at a top 30 school, got a 3.0 GPA last semester (I really screwed up first semester because of senioritis, I know). I plan on retaking one of the courses and hopefully by the time I finish sophomore year I'll have a 3.2+ GPA.

Right now I have a small internship with a guy I know- it's a job recruiting international talents for the hotel/restaurant industry. It's part time and I'm also bagging groceries part time just for extra cash.

Is there anything else I should be doing now? I'm also studying a lot for courses I'm going to take next semester just so I have an extra edge.

So hypothetically if I get a 3.2+ GPA and have the work experience from this summer, how hard would it be to get an internship at a consulting firm? Just to add I plan on double majoring in Economics, International Relations and minoring in Computer Science.
