I just bought an offset smoker and am getting ready to try my hand at making some solid bbq. Anyone here into it? Any tips from the southern monkeys? I'm still waiting for it to be delivered so am still in the information gathering phase before my first cook. Been watching a ton of youtube videos, reading various forums, etc.
