For those in IBD or high finance what is the best fitness tracker to purchase if I don't want to wear my apple watch to office and instead a timepiece. Want something that is discrete/small to track my fitness.

Can recommend a Garmin watch
I think there are some ring products that track fitness, but I can not comment on them. Realistically, I don't think anyone would comment on a apple watch.
Apple watches are very common, what’s the issue
You could weather a WHOOP on your dominant hand and your timepiece on your non dominant hand. Personally think WHOOP is the best fitness tracker.
I used to use a Whoop band and now wear a Garmin Venu 3. The Whoop was great because it was super slick and you could wear it on one wrist and wear a nicer watch on the other. I liked it but had it for like 3 years so wanted something new lol. The Garmin Venu 3 IMO is a nicer, more professional looking apple watch, with more features. It also had a nice golf feature which I use every time I play.
