You went to school X because of the student life, the interesting clubs it has, the vibrant theatre scene, the innovative teaching style. Doesn't really matter. Talk to an Admissions Counselor at your school and tell them to sell you, noting very clearly you don't care in the slightest about creature comforts like dorms with Central Air, a doorman etc. Use their answer if you really can't think of anything.
You did Econ because its frickin awesome. Say you didn't realize how interesting finance was until later, and that you really got interested in the markets when you saw Ben Bernanke turn on the money printers with QE.
To answer your question - it's definitely a lot easier to get into finance if you went from Andover to Princeton and majored in Finance, but it's not impossible to do so even if you're a Basket Weaving major from Timbuktu University.
Okay, that just might be impossible. Point is, though, that you're not completely screwed. There are plenty of posters who've broken in from way out of left field.
Side note 1: For someone who majored in Pol Sci, you sure don't know how to string together a paragraph.
Side note 2: You probably shouldn't brag about a 2030 SAT on WSO, because I'm 90% certain that a score of 2100 would be considered "okay" on WSO.

Given the school I did go to, every single person could see through what would be an obvious lie. When you go to a shit state school, especially when your numbers say you could have went elsewhere, you want to show that you were responsible in doing so, not delusional. If I'm talking to a Princeton grad and they're looking at my university with disgust already, what sounds better? "I chose to take on less debt" or "but my shit state school is so cool! there are generic clubs, unexciting lecture, no culture to speak of, and everyone just gets shitfaced for entertainment out of boredom." C'mon now...

Same as my answer to "what did you do during the summers between your freshman and sophomore year and sophomore and junior year?" - I worked as a waitress to save money so I could supplement my income the following year should I need to pay rent in a major city to do an internship and also afford to study abroad, which was a goal of mine. Having rich parents is not a prerequisite for working in finance (though it helps, haha)
