Non-In Person Modeling Test Question

Hey All - I'm prepping for upcoming interview processes and have been spending a lot of time doing scratch LBO tests using case studies I've come across. Given what has been going on with covid, I imagine all interviews right now will be virtually? As far as modeling tests go, I would imagine it is the same (although still timed). If this is the case, how will they know if we start from a scratch model or if we use a basic template to save time?
