is there any chance I could skip IB with two summers of PE internships( one <4mil and the other managing 40b) and one top BB internship? I absolutely hate IB, and I'm interested to see if it's possible, since I'm only a semi-target.

It may be possible but keep in mind that you will be giving up a proven brand (assuming you would be a BB or well recognized boutique) on your resume that signals structured training, work ethic and a network. Understand you have to go through the IB grind.
It’s possible, but there aren’t a lot of PE analyst seats
Background sounds fine, but realize that you may shut yourself out of top funds skipping IBD if you go to a non-name brand fund for your PE analyst stint. For example for even some UMM firms with built out analyst programs (Roark / Audax / Partners Group) you don't really see their analysts moving to other UMM funds or up market.
