Atypical Experience / background

I have a less conventional background - got a STEM undergraduate degree from a semi-target, worked for ~2 years in consulting in a specialized field, and now work at a hedge fund / Crossover fund in that same specialized field with ~$2-10B AUM as an associate. 

I'm currently studying for and planning to take the GMAT, assuming I score >720, would my profile fit a top school? I would be shooting for HBS / GSB, or at least M7

More importantly, what would my job options coming out of the program look like? My reason for getting the MBA is the intent to transition to a somewhat less intense work environment (less "on 24/7" mentality than my current role), with greater long-term job stability and earning potential. I am thinking about PE or a long-only asset manager. 

I probably haven't done enough of my own research prior to posting this so any thoughts or advice are helpful
