Dropping Minor in Senior Year

Wanted some thoughts here. Am in my senior year and have my offer signed for post-grad. Currently have an econ minor, but want to take it easy and enjoy my time before I hit the desk. Is it dumb to drop my minor now that I only need 1 class to finish it? Additionally, is a minor truly going to be something that sticks out on my resume post-grad? TIA
