How good is a 760 compared to a 720? Is it that much better or is it a more check the box type of thing when the score is post 700.

It's expected of you that you will have above a 700 if you apply to any top programs. So 760 or 720 doesnt matter at this point, it's the rest of your application that does.
All GMAT scores above 700 are viewed very similarly by schools in that it should help prove that you are capable of handling the rigor of their program, along with your work experience and academic performance. That said, schools also care about their rankings and the higher their average GMAT the better from that standpoint. Of course, their first priority is getting good students so differences in 700+ GMAT's typically only come into play when an admission committee is trying to decide between two candidates with similar backgrounds.
I agree with barnetsl, although I do differ on one thing. Sure if you have two candidates with similar background and they have only one spot left they will take the one who has a better something. But what is the probability that you have two candidates that are exactly the same, and that they have only one spot left to give? In other words as long as you have above 700 you should be fine, although as barnetsl mentionned, schools do care about their average GMAT, and it seems that the average is at 720 in most top programs. So I would say you need 720+ now.
Disclaimer: I am not in an admission committee, and those are only conclusions I am making based on my very limited experience.
